Open Sauce is an open innovation project to develop circular retail products from by-products of produce from a network of food social enterprises.

Background

The Open Sauce project is led by Moving Feast: a network of Victorian food and social enterprises. Open Sauce is an open innovation project created to ensure all produce and by-products are 'tasted not wasted'.

The project will audit and map the supply chains, waste streams, assets and capabilities across the network and then invite the public to work alongside environmentalists, chefs, and product developers to develop a delicious range of new circular retail products.

The project is circular and social, creating training and employment pathways for groups of people who have significant barriers to training and employment.

Objectives

  • Increased access to circular economy products and services for businesses and consumers.
  • Increased materials efficiency across supply chains.
  • Increased duration of product and material lifecycles and value.
  • New circular business models, materials markets that incorporate environmentally sustainable business practices.

Open Sauce Waste Audit tool

A waste audit can reveal a lot about how your business is operating today. It can provide insights and inspiration on how you might reduce waste and increase the circularity (reuse) of items in your waste stream. Follow a step-by-step photo guide of a waste audit so you can see how the process works.
