Funded project – Converting brewers spent grain byproduct to food products
Deploying a state-of-the-art pilot facility to process waste brewers spent grain into speciality food ingredients suitable for human consumption.
Background
More than seventy thousand tonnes of wet brewers spent grain waste is produced in Victoria each year.
This project will develop an advanced manufacturing state-of-the-art pilot facility and work with brewers and food manufacturers to process waste brewers spent grain into speciality food ingredients suitable for human consumption. The facility will be the first of its kind in Australia.
The facility will start by manufacturing a premium speciality flour, an upcycled ingredient that has several health and sustainability advantages including high levels of protein, prebiotic dietary fibre, and micronutrients, such as iron, zinc and magnesium.
Objectives
Make new products from food waste (for example, plant-based textiles, vitamin supplements, ingredients and meals, and animal feed).
